When eaten raw, radicchios have a sharp bitter taste that could be a turnoff for some. But when roasted, this healthy veggie mellows out into an earthy flavor. As a bonus, we top it off with crispy bacon, crunchy pine nuts, and a balsamic-maple dressing that’ll have you digging in for seconds.

To get started, combine the quartered radicchio in a large bowl with the olive oil salt, pepper, garlic powder, and minced onion. Make sure to toss the radicchio well to fully coat it. Once ready, place the radicchio quarters on a parchment-lined baking sheet and roast for 20 minutes, or until it is slightly charred.
Next, mix the balsamic vinegar and maple syrup together in a small bowl. Drizzle it over the roasted radicchio and add the crumbled bacon, pine nuts, and a sprinkle of fresh chopped parsley on top. Serve immediately and enjoy!

Ingredients
2 T olive oil
½ t salt
½ t ground black pepper
1 t garlic powder
1 t minced onion
4 cups quartered radicchio
1 T balsamic vinegar
1 T maple syrup
2 cups cooked bacon, crumbled
¼ cup walnut
1 T fresh chopped parsley, for garnish
Instructions
Preheat the oven to 375°F and line a large baking sheet with parchment paper.
Combine the olive oil, salt, pepper, garlic powder, minced onion, and quartered radicchio in a large mixing bowl. Toss well to coat and place onto the prepared baking sheet. Roast for 20 minutes, or until the radicchio is slightly charred.
Mix the balsamic vinegar and maple syrup together in small bowl, then drizzle over the roasted radicchio.
Top with crumbled bacon,walnut, and a sprinkle of fresh chopped parsley. Serve immediately and enjoy!
